Here at the Wolf Cove Inn, a bed and breakfast in Maine, we adapted our family secret Mushroom Potato Hash recipe to breakfast. For generations of my family a highlight at special occasion meals, it now graces our breakfast table at the Inn. I’m certain you’ll love this dish, topped with a couple of eggs, or as a side dish during your holiday meals.
This Polish dish was a staple at our dining table during big family gatherings. My dad (we call him Commodore – you’ll have to visit to find out why) felt like he shouldn’t show up if he didn’t make this! For me personally, this was what I looked forward to at holiday meals.

Polish Mushroom Potato Hash
This is a really simple, four ingredient recipe. Mushrooms, potatoes, onions and salt pork (use olive oil for a vegetarian version of the dish). That’s it. This dish proves that delicious-ness doesn’t need to be hard or complicated. Ten minutes of prep work and thirty minutes of cook time and you are golden.
Serves 8-10
Ingredients
- 6 medium potatoes – (we use red skin bliss potatoes) peeled at your discretion – we leave the red bliss potatoes unpeeled for extra yumminess, 1/2 inch dice
- 2 large onions, chopped
- 1.5 pounds white and wild mushrooms, sliced
- 6 thick cut slices of salt pork (the key ingredient!)
Preparation
- Heat a heavy bottom large skillet (I prefer cast iron) over medium heat.
- Fry up the salt pork until crisp and rendered, pushing on the pork to release as much juice as possible, about 5-8 minutes. Be sure to turn the pork once or twice while cooking. Discard salt pork.
- Add onions, stir to coat and cook until opaque, about five minutes.
- Add potatoes, season with salt and stir to coat. Cover and cook on medium for ten minutes. A nice steam will form. Stir once during the ten minutes.
- Add the mushrooms and gently stir to incorporate. Cover and cook an additional ten to fifteen minutes until potatoes are soft, the mushrooms cooked and a nice “gravy” has formed.
- Season to taste with salt and pepper. Serve hot topped with a couple of fried eggs.
Serving
For our Polish special occasion meals, this was a side dish at dinner. At Wolf Cove Inn, we like to top with basted or over-easy fried eggs to make it a great breakfast meal. The flavor of the runny yolks mixing in with the Mushroom Potato Hash starts a little taste buds party in your mouth.
Serve with a side of bacon, maple sausage or sliced Polish country sausage and you’ve started your day on the right foot.
